Marc and I worked together @ Scalo, we were colleagues and friends. Marc had been a restaurateur in Marseilles and also in San Tropez.....the real ones in France.

The location in San Tropez was called La Noche, it was terribly popular and he did very well. He had a restaurant in Marseilles called the Rio Grande. It also did well. Marc fell in love with an American girl, Claire, now his wife, she was training to become a chef. Marc sold his interest to follow his love to the United States, he arrived and became a citizen, and went to work @ Scalo. Some people are born leaders and Marc was really made to be an owner, not an employee. He approached me with an amazingly detailed business plan, and a location that he felt we could secure.....
we did.

The location was so ugly it took my breath away, I was scared, but I believed in Marc, and he certainly had no confidence problems.....we set out to build a restaurant. Marc, with his 2 hands built everything you see today, he scrounged, he bought from Re-store, he used scrap wood, we had some old equipment that he reworked.......and Magically 10 months later we had a restaurant.....we opened very quietly....we wanted to make sure the rust was knocked off of us and that when we were ready we would be really ready.

Oh, the business plan, my investment was to be 35,000.00 it ended up being 200K.

But what a neat place!

Brasserie was hard to build, it was a long time coming, but once done it has been absolutely gratifying....I am proud of Marc, and I am proud of our chef, they have done a yeoman's work getting this done.
